Travelling Snack Restaraunt is a food van operated by Nicolas Smeets. Nic's family is European but he grew up in the Perth hills. One side of his family are in the hospitality industry and the other side grew up on farms growing fresh produce. There is little wonder where his love of food started.

After several trips to Europe and a gap year after high school, he started a Bachelor of commerce at UWA. After a year of studying, he got a bit bored with all the numbers and writing and started a chef Apprenticeship alongside his degree. He completed his apprenticeship under head chef Marianne Kempf at The Gala restaurant in Applecross at the end of 2013 along with his Bachelor of commerce.

After completing everything he was in need of a holiday. He spent the next 2 years travelling around the world, cooking to support his travel habit. He lived on the east coast of Malaysia for 6 months, road tripped from LA down to Cancun, Ran out of money in Havana, climbed the highest mountain in North Africa and lived on the ski slopes off Germany all while experiencing the local cuisine.

Now finally back in Perth, he wanted to open his own place without being to tied down ( just in case he had the need to travel again). The obvious choice, set up a food truck.

The food will be both classic and creative, made to bring back those amazing oversea's memories. There will be a focus on bold flavours and fresh local produce.
